Breakfast: 10 Fast & Easy Recipes

Breakfast at our house is not usually very fancy. It’s usually cereal with milk, toast, yogurt, or Jimmy Dean sausage biscuits (they microwave in 50 seconds!). I try to push protein..but they aren’t always feeling yogurt or sausage calling their name. One of the things my youngest was the most distressed about last year when I was teaching full time was the fact that I just didn’t have the time to make him cinnamon toast (soften the butter, butter each slice gently, sprinkle with cinnamon, then sprinkle with sugar..when piled 3-4 high, it melts and creates perfection). It just wasn’t at the top of my priority list (yes, I have guilt).

When I am on top of things (hahahaha!), here are some of our favorite easy-to-prepare breakfasts:

(Yum..all things we love!) This makes about 15, so adjust according to your family size and morning appetite. You’ll need to squish them down since they don’t spread.


Sausage Hash Brown Breakfast Casserole

This is SO good! I actually love that it’s not in little muffin cups. It’s easier to prepare, store, and uses fewer disposable things. I love to have a late brunch on Sunday, and then save the rest for leftover breakfasts.

Double the recipe, and make a big stack of Bisquick pancakes! They store really well in a Ziploc bag in the fridge. Then microwave one or a stack-super easy. If you are feeling fancy, make copycat Cracker Barrel pancakes! : )

Biscuits (with butter or jelly)

This is actually something I can do in the morning. Heat the oven, wake up the kids, pop them in the oven, and done! If I have time, I can heat precooked sausage patties, and feel pretty good. If you have more time, here is a great biscuit recipe. Please invite me over.

These are good, but I modify them. I just use breakfast sausage instead of chorizo, white onion instead of leeks and cheddar jack instead of mozzarella cheese. You can also sub any veggie for the 1 cup of spinach. I really like red pepper and broccoli. These are great protein and pretty easy.

This is SO good! I have actually started putting oats in all my smoothies, I had no idea I could just put them in raw! But yum..tastes like a baked dessert. These are not make ahead..but super easy to make four servings, just double the recipe. I keep lots of frozen fruit on hand, plain yogurt, and some almond milk-it’s super easy to make your own smoothies! *If you use vanilla yogurt, you don’t need sweetener. When I use plain yogurt, I need sugar, honey, or Splenda to sweeten it a bit.

Sooo delicious. Chopping the apple takes a little time, and you want to use apple juice or cider if possible. *She means quick cooking oats in the recipe. : )

These are easy to make and remind me of Rice Krispy treats! I like to double the recipe, and use a 9x13 dish. You have to double the parchment across the longest side.

You can make the perfect boiled eggs in less than 15 minutes. Use up your oldest eggs (they peel best). Boil, then ice them to stop the cooking and make them easier to peel.

Here is how to make Carter’s favorite: Cinnamon Toast. It seriously only takes 2.5 minutes. What a blessing that his favorite isn’t Eggs Benedict or homemade biscuits.


And if all else fails, have a bowl of cereal, banana, your favorite yogurt, or a protein bar. I’ve learned if you give the kids a big hug with their breakfast, they don’t even notice it’s not cinnamon toast.
